It's during his business school when he was 23 that Tomy Gousset had the idea of changing his path for something creative and applied to the reknown Ferrandi school, where he will discover his talent and passion for cuisine.
Since the beginnings of Tomy & Co with bistronomy, the plates gained in sophistication and complexity. After having honed his skills with Solivarès at the Taillevent (***), with Alleno at Meurice (***), with Beaumann at Maison Rostang (**) and with Daniel Boulud in New York (***), Tomy Gousset opted for a return to the essence of cuisine when he opened his own restaurant.

The Franco-Cambodian chef uses his own vegetables that grow in his Chateau de Courances in Paris suburbs, he lets his talent and inspiration guide his creations. His dishes are served with products carefully sourced and always presented with elegance.
